If it weren't for my horse...
The stories were written long ago (in a galaxy...oh nevermind) and there are tons of them to choose from.
Han and Leia's twins are both future Jedi - Luke starts a new Jedi school and there are always sith running around. Not to mention they just collapsed the empire at the end of part VI so there is this whole "gotta reorganize the galaxy" thing again. But the remnants of the empire still have tons of ships, bases, etc. to deal with.
The originality should be right up there with Blues Brothers 2000
